Fail: Defrost meat, fish or poultry in the wrong place in the fridge

Yes, defrosting in the fridge is safer than on the counter. But putting meat, chicken or fish on a high shelf is a bad idea. Raw animal proteins can leak as they thaw, contaminating everything down below. Safer step: Defrost on the lowest shelf in the fridge, with a plate or pan big enough to catch drips.
