If you’ve ever scraped skin from your knuckles into a fresh pile of Parmesan, you’ll appreciate this trick for grating or shredding any semisoft or hard cheese: Stick it in the freezer for 45 minutes to an hour beforehand. A semi-frozen hunk of Havarti or ball of mozzarella is less likely to bend or break into small pieces and put your fingers at risk of rubbing against the blades of the grater. Don’t freeze cheese much longer than an hour, though, or it may end up dry and crumbly.
